Homemade Chicken Noodle Soup

I’m embracing this chilly fall weather with some old fashioned chicken noodle soup! This is a foolproof, easy recipe, that just requires a few hours time. But if you’re home on a Sunday afternoon in your pj’s, Netflixin’ and chillin’, this recipe is perfect!


-1 small chicken (I think mine was around 2 lbs.)

-2 c. onions, chopped

-1 bunch celery, chopped

-6 cloves of garlic, minced

-1 lb. carrots, chopped

-2 bay leaves

-1 tsp. dried thyme

-1 1/2 tsp dried parsley flakes

-1/4 tsp. salt

-1/4 tsp. pepper

-Water, as needed

-Additional salt and pepper, to taste

Let’s get cookin’!

-Rinse of the chicken and place in a large pot of salted water. Turn heat on medium high until the water is boiling. Reduce heat o medium and let simmer for 2 hours.


-At this point the meat will be falling off the bones! 🙂 Use a large cookie sheet and peel apart the meat from the chicken with a fork.


-You can skim some of the fat off the broth, but not too much, as you want the broth to have some flavor! Now you are left with a beautiful and yummy broth!

-Add in the pieces of chicken, along with the diced onion, carrots, celery, garlic, thyme, parsley, salt and pepper. Heat the soup to a boil, and then reduce heat to medium low. Simmer for 2 hours.

image2[1] image6[1]-Check the soup periodically and stir as needed. You can add more seasonings as you go along as well!


-At the end you are left with a delicious soup that’ll feed you for days! Enjoy! 🙂
